Tomato Basil Salmon Recipe Easy Weeknight Dinners
Ingredients:
4 salmon fillets, about 6 ounces each
Salt and pepper, to taste
4 tablespoons olive oil
4 large tomatoes, sliced
1/2 cup fresh basil leaves
4 cloves of garlic, minced
1/4 teaspoon red pepper flakes (optional)
1 lemon, cut into wedges
Instructions:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Season both sides of the salmon fillets with salt and pepper.
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the salmon fillets to the pan and cook for 3 to 4 minutes on each side until the skin is crispy. Remove from heat.
In the same skillet, add the remaining 2 tablespoons of olive oil, sliced tomatoes, minced garlic, and red pepper flakes (if using). Cook for about 5 minutes until the tomatoes have softened and the garlic is fragrant.
Stir in the fresh basil leaves and cook for another minute.
Arrange the salmon fillets on the prepared baking sheet. Spoon the tomato basil mixture on top of each fillet.
Bake in the preheated oven for 10 to 12 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serve the salmon with the tomato basil mixture and lemon wedges on the side.
