Easy Weeknight Dinners
Ingredients:
- 4 boneless chicken breasts
- 2 large carrots, peeled and chopped
- 2 medium potatoes, peeled and chopped
- 1 large onion, chopped
- 2 cups of green beans
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
Instructions:
- Preheat the oven to 400°F.
- In a large bowl, mix together the chopped carrots, potatoes, onion, green beans, olive oil, salt, pepper, paprika, basil, and thyme.
- Transfer the mixture to a large baking dish.
- Place the chicken breasts on top of the vegetables, spacing them evenly apart.
- Roast in the oven for 25-30 minutes, or until the chicken is fully cooked and the vegetables are tender.
- Serve hot and enjoy your one-pan roasted chicken and vegetables dinner.
Note: You can add any vegetables of your choice to the mix, such as bell peppers, mushrooms, or zucchini. Feel free to season with your favorite spices to customize the easy weeknight dinners.
