Spaghetti Carbonara Recipe Easy Weeknight Dinners
Ingredients:
1 lb spaghetti
4 large eggs
1 cup freshly grated Pecorino Romano cheese
1 cup freshly grated Parmesan cheese
8 slices of pancetta or bacon, chopped
4 cloves of garlic, minced
Salt and pepper, to taste
Olive oil
Instructions:
- Fill a large pot with salted water and bring it to a boil. Cook the spaghetti according to the package instructions until al dente. Reserve 1 cup of pasta water.
- In a separate pan, cook the pancetta or bacon over medium heat until crispy. Add the minced garlic and cook for 1 minute. Remove from heat.
- In a large mixing bowl, beat the eggs and grated cheese together until well combined.
- Drain the spaghetti and add it to the bowl with the egg and cheese mixture. Mix everything together until the spaghetti is well-coated.
- Add the pancetta and garlic mixture to the bowl with the spaghetti and mix to combine. If the spaghetti seems too dry, add some of the reserved pasta water to loosen it up.
- Season with salt and pepper, to taste.
- Serve immediately, garnished with additional grated cheese and a drizzle of olive oil.
