Quick And Easy Stir-Fry With Tofu And Vegetables Easy Weeknight Dinners
Ingredients:
- 1 block of firm tofu, drained and pressed
- 2 cups of mixed vegetables (such as bell peppers, broccoli, snow peas, and mushrooms)
- 2 tablespoons of vegetable oil
- 1 tablespoon of minced garlic
- 1 tablespoon of grated ginger
- 2 tablespoons of soy sauce
- 1 tablespoon of oyster sauce
- 1 tablespoon of cornstarch
- Salt and pepper, to taste
Instructions:
- Cut the tofu into bite-sized pieces.
- Heat the oil in a large wok or skillet over high heat. Add the tofu and stir-fry for 3-4 minutes, until it starts to turn golden brown.
- Add the garlic and ginger to the wok and stir-fry for 30 seconds.
- Add the mixed vegetables and stir-fry for 2-3 minutes, until they start to soften.
- In a small bowl, mix together the soy sauce, oyster sauce, cornstarch, salt, and pepper.
- Pour the sauce into the wok and stir-fry for another minute or until the sauce thickens and coats the tofu and vegetables.
- Serve the stir-fry with rice or noodles.
